Order the saenggogi (raw pork platter) and you’ll get mainly front leg cuts, along with special offal selections like raw liver, omasum (cheonyeop), and aorta (oduregi). The dipping sauce is homemade, made from plum extract, minced garlic, and gochujang. The front leg meat stands out with its firm and chewy texture — more bouncy than other cuts.
