The name “Song Gi-won” belongs to the very first master of Jinju Naengmyeon, and the legacy lives on. In the heat of summer, waiting in line is inevitable, but one bite and all that queue fatigue melts away 👍🏻. Just like Pyeongyang is famous for its naengmyeon in the north, Jinju is the naengmyeon capital of the south. Jinju-style naengmyeon uses a broth made by combining rich, bone-simmered beef stock with seafood stock. Since seafood stock can carry a fishy note, each restaurant’s skill lies in removing it—and here, they do it so well that the broth is literally worth stealing ✨. Uniquely, Jinju Naengmyeon is topped with pork yukjeon (pan-fried battered pork slices). Wrap the noodles in a piece of yukjeon and you’ll taste a slightly sweet yet refined umami from the seafood, wrapping around your tongue. The noodles are 100% buckwheat, yet surprisingly chewy and nutty. The bibim naengmyeon isn’t overly spicy—its flavor grows on you, bite after bite. A little TMI: naengmyeon was actually the very first food delivery item in Korea. King Sunjo once ordered it via delivery, and to honor him, they named menu items things like “Sunjo 1800” 😉. Unique in flavor, unique in name—if you want to taste Jinju’s signature local dish, you have to come here ❤️.
