True to its bold name, the dish features tender pork so soft you can scoop it with a spoon, infused with the aromatic flavor of cumin. On top, the sauce is mixed with finely chopped stir-fried zhacai (pickled mustard stem), adding a pleasant crunch to contrast the meat’s tenderness. You can’t miss their fried dumplings either. Unlike the thin-skinned Japanese gyoza, Korean-style dumplings are wrapped in thicker, chewier skins. These are packed with juicy pork filling that bursts out when you take a bite—just be careful, they’re piping hot! Another specialty here is the Eggplant Gan Jjajang. Unlike regular jjajangmyeon, where the sauce is pre-cooked, gan jjajang is stir-fried to order, bringing out a smoky wok aroma and the true flavors of each ingredient. The subtle sweetness of eggplant blends beautifully with the sharp, spicy kick of chili, making it addictive. If you like things spicier, sprinkle a little chili powder on top.
