This Seolleongtang restaurant, located near Euljiro 1(il)-ga Station in Myeong-dong, Jung-gu, Seoul, has been serving customers since 1966. It’s tucked away in a small alley, so be sure to look carefully so you don’t miss it! Their signature dish is, of course, Seolleongtang (Ox Bone Soup), and the Boiled Beef Slices (Suyuk) are also very popular. The basic side dishes 🥢—napa cabbage kimchi, radish kimchi, garlic, onions, chili peppers, and ssamjang—are neatly prepared to perfectly complement the soup. Seolleongtang 🍲 is a traditional Seoul dish made by simmering ox bones and meat for a long time to extract a rich, deep broth. This restaurant uses 100% Korean beef, giving the soup a clean yet intense flavor. The soup is served with rice, and it’s best to enjoy it before the noodles inside become too soft. Unlike some versions, the broth here is quite clear but well seasoned, and it pairs wonderfully with the slightly fermented kimchi. The beef is tender and juicy, offering that distinctive flavor of Korean Hanwoo. No Seolleongtang experience is complete without kkakdugi (cubed radish kimchi). Its tangy and refreshing flavor cuts through the richness of the broth, enhancing every spoonful. In addition to the soup, they also serve boiled beef slices (Suyuk) 🥩. It’s not cheap since they only use premium Korean beef, but you can enjoy a variety of cuts, each with its own flavor and texture. Tongue offers a pleasantly chewy texture. Head meat is soft and gelatinous. Brisket is slightly fatty yet tender. Spleen has a unique, liver-like texture. Each part provides a distinct taste, making it fun to find your personal favorite. Once you’ve enjoyed the meat and broth, don’t forget the finale: mixing the rice 🍚 into the soup. While eating the rice and meat separately is nice, true Seolleongtang lovers say the dish is complete only when the rice is stirred in. If you want an extra kick, try adding a bit of kkakdugi brine—this is a popular Korean tip for a slightly spicy and tangy finish!
