Introducing a hidden gem in Gwangju, famous for its grilled gopchang (intestines) and hearty gukbap (rice soup)!The spicy gopchang here has just about the same heat as Shin Ramyun, so it’s not overwhelmingly hot and easy for anyone to enjoy. What makes it extra special is the use of daechang (large intestine), which gives the grilled gopchang an unbelievably tender texture. Dip it into the savory sauce or enjoy it with onion and perilla leaves—you’ll discover a combination that’s simply heavenly.

Another signature dish is the mixed gukbap, which comes with a unique ingredient: Ampong Sundae (blood sausage made with pork intestines). The broth is clean yet deep in flavor, and since the rice is already mixed in, it has a slightly sticky but comforting texture.

The Ampong Sundae itself is stuffed into makchang (pork large intestine), giving it a nutty and distinctive flavor. You’ll also find pisundae (blood sausage with vegetables, almost dumpling-like in taste) and chal-sundae (glutinous rice sausage), both of which add satisfying variety to the meal.
